Fruity Spiced Oat Bars – Slimming World Recipe

I’m not a fan of porridge but I love just about everything else that contains oats! These fruity spiced oat bars are only 4.5 syns per serving on Slimming World.

Fruity Spiced Oat Bars

Ingredients

  • ½ tsp finely grated orange rind
  • 150ml freshly squeezed orange juice
  • 110g stoned dates
  • 1 level tbsp clear honey
  • 1 banana
  • 2 large eggs, separated
  • 75g porridge oats
  • 75g wholemeal flour
  • 1 tsp ground allspice
  • 1 level tsp icing sugar

Method

  1. Preheat the oven to 180°C/160°C Fan/Gas Mark 4. Grease and line a 18cm/7in square cake tin. Place the orange rind and juice in a small pan. Finely chop the dates and add to the pan. Bring to the boil, cover and simmer for 5 minutes until the dates are soft. Remove from the heat, mash using a fork, then stir in the honey and allow to cool for 20 minutes.
  2. Mash the banana and stir into the date mixture with the egg yolks. Place the oats in a bowl, sieve in the flour and add the allspice.
  3. Whisk the egg whites until foaming but not too stiff, then fold into the oaty mixture along with the date mixture. Pile into the prepared tin and smooth over the top. Bake for 20-25 minutes until golden and just firm to the touch – take care not to overcook or they’ll be dry. Allow to cool for 10 minutes and then mark into 12 bars. Cool completely and then remove from the tin. Dust with icing sugar just before serving.

Store in an airtight container and eat within 2 days of baking.
