Slow Cooker Beef And Broccoli Recipe
I love being able to put everything in the slow cooker, leave it on all day and just serve it at night when we’re ready to eat ๐ This slow cooker beef and broccoli recipe is Slimming World friendly and works out at only 2 syns per serving. It’s lovely served with rice but just lately I’ve discovered courgetti and much prefer it. It’s quick to cook, it’s a speed vegetable and you can add any flavour to it. However, Ant made some lovely jacket potatoes to go with the beef and broccoli and I really enjoyed them.
He scooped out all the potato from the jackets then mixed it with some cooked mixed veg and topped them with my healthy extra cheese portion. For everyone else, he also added some butter to the mash and they all loved them ๐

Ingredients
- 500g stewing beef
- 2 onions, peeled and chopped
- 2 garlic cloves, crushed
- 400ml beef stock
- 60ml soy sauce
- 1 tbsp honey (2.5 syns)
- 2 tbsp cornflour (4.5 syns)
- 250g broccoli cut into small florets
Instructions
- Put the beef, onions, garlic, stock, honey and soy sauce into the slow cooker.
- Turn to slow and cook for around 6 hours.
- When the beef is tender, ladle some of the fluid from the slow cooker and use it to make a paste with the cornflour. Use more liquid if needed. The cornflour needs to be pourable but not too thin
- Pour the cornflour mixture into the slow cooker and stir well.
- Cook for a further 20 minutes then serve with rice or like me, courgetti!
Chinese five spice
I want to try this one day when Kaycee isn’t here so I can add some Chinese five spice powder to it. I love it but she’s not keen at all!
