Welcome to day 11 of my 24 days of Slimming World Christmas Buffet Recipes. Today’s recipe is for Slimming World Sweet Potato Pakoras.

Sweet Potato Pakoras

We don’t use sweet potatoes very often and I reckon we’re missing out!
These were really nice and everyone enjoyed them. They’re totally syn free which makes them taste even nicer!

Ingredients

  • 3 large baked sweet potatoes, grated
  • 1 large red onion, grated
  • 1 large brown onion, grated
  • 3 spring onions, finely chopped
  • 1 teaspoon Garam masala
  • 1 teaspoon cumin
  • Chilli flakes to taste
  • Salt and pepper to taste

Method

  1. Pre-heat the oven to gas mark 6/ 200C / 180 fan
  2. Put the grated onions on a clean tea towel, gather up the edges and squeeze out the excess liquid.
  3. Place all the ingredients into a large and mix well.
  4. Make as many small balls of the mixture as you can and place them on a baking sheet that has been lined with parchment
  5. Bake for around 20 minutes

    Did you cook your sweet potatoes before grating them/

      Hi Carol,
      Yes, the ingredient list specifies – 3 large ‘baked’ sweet potatoes, grated :o)

    Hi, did you remove the skin before you grated the potatoes and did you use any fry light? Thanks, Suzanne

      Hi Suzanne, I didn’t remove the skin before grating and didn’t use Frylight but I’ve read that spraying with Frylight can make the outside crispier.
      They were fine for us without but when I make them again I’m going to try with the Frylight to see if it makes much difference 🙂
