Campfire Stew Slimming World Recipe

We tried campfire stew for the first time this week after seeing the recipe shared in our Slimming World group. It was absolutely delicious and very comforting on a cold January evening.

We had it with roast potatoes but I think it would be even more comforting with mashed potatoes. You could also serve it with rice, pasta or some speed veg if you’re doing SP.

Campfire Stew

  • 1 small/medium gammon or pork joint
  • 1 onion, chopped
  • 3 crushed garlic cloves
  • 2 tins baked beans
  • 1 tsp chilli powder
  • 2 chopped peppers
  • 1 tbsp smoked paprika
  • 6 tbsp tomato puree
  1. Place all the ingredients in a slow cooker and cook for 6 hours on low.
  2. Shred pork before serving

The liquid looked a little thin when we first took the lid off but shredding the meat and stirring it all in thickened up the stew perfectly.
