Chicken Satay Skewers – Slimming World Buffet

Welcome to day 4 of my 24 days of Slimming World Christmas Buffet Recipes. Today’s recipe is for Slimming World chicken satay skewers. The peanut sauce is 6 syns for the whole pot and the chicken is free.

For The Chicken

  • 4 chicken breasts
  • 2 tbsp light soy sauce
  • sweetener – 1 tbsp
  • 1 garlic clove, crushed
  • 1 tsp ground cumin

Chicken satay

For The Sauce

  • 1½ tbsp reduced fat peanut butter
  • 60ml water
  • ½ garlic clove, crushed
  • sweetener – 1 tbsp
  • light soy sauce – 1 tbsp
  • Fat-free fromage frais – 1 tbsp


  1. Dice the chicken breast and place in a bowl; mix the marinade ingredients together in a separate bowl and pour over the chicken. Cover and marinate in the fridge for at least 2 hours or leave overnight.
  2. Preheat the oven to 180°C/160°C Fan/Gas 4, drain the chicken and then skewer the chicken onto cocktail sticks. Place the kebabs on a baking tray, spray with low-calorie cooking spray and cook for 15 -20 minutes until the chicken is thoroughly cooked.
  3. While the chicken is cooking, make the sauce by mixing the peanut butter, water and garlic together in a pan over a low heat. Continue heating until the sauce thickens slightly, don’t worry if it seems a little runny, it’ll thicken as it cools. Remove from the heat, allow to cool slightly then add the sweetener, soy sauce and fromage frais. Mix well, beat until smooth and serve with the chicken.
