Bacon Tomato Pasta – Slimming World Recipe Cooked By Kaycee

A while ago, Kaycee decided she wanted to start her own cooking blog. She called it Kaycee Cooks and she put a few recipes on there.

Time restraints with after-school clubs, Brownies and then Guides meant she wasn’t left with much time to update the blog.
I’ve decided to move the posts over here and close down the other blog for now.

I remember really enjoying this bacon tomato pasta recipe and I’m wondering why we haven’t made it since! I’m going to add it to the menu next week and get Kaycee to cook it again!

Bacon Tomato Pasta

Bacon Tomato pasta Slimming World recipe

Ingredients

400g baby plum or cherry tomatoes halved (a mix of colours looks great)
2 garlic cloves cut into slivers or roughly chopped
2 tbsp balsamic vinegar
Low-calorie cooking spray
4 bacon rashers visible fat removed, cut into strips
400g dried pasta of your choice. Cook to package instructions.
125g frozen peas
salt and freshly ground black pepper
a small handful of finely chopped fresh parsley

Method

Chop up the tomatoes and put them in a bowl, add the garlic and Balsamic vinegar, toss well. Spray a roasting tin with low cal spray. Tip the mixture in and roast for 10 minutes at Gas 6/180° fan/ 200°. Whilst doing this boil the peas.

Scatter the bacon over the top of the tomatoes and add the salt and pepper and parsley, (we used mixed herbs because we didn’t have parsley) then bake for another 10 minutes.

While the tomato mixture is baking, cook the pasta according to the packet instructions. Drain when cooked.

Put the pasta, peas and tomato mixture in a bowl. Mix well.
