Tuna Monster Rolls with Princes

Halloween dinner

Ella doesn’t go back to school until tomorrow so we’ve decided to make a Halloween themed dinner for everyone tonight.
We’re making tuna monster rolls with tins of tuna we were sent from Princes.

Ella’s a huge fan of tuna and Halloween so these are perfect for her! For those who don’t like tuna (Kaycee!) we’re making hot dog mummies, serving Monster Munch crisps as well as pizza, zombie juice, and Halloween cakes.

Here’s how to make the tuna monster rolls

  • Serves: 4
  • Preparation: Approx 25 minutes

Ingredients

  • 4 soft bread rolls
  • Butter, for spreading
  • A few curly lettuce leaves
  • 1 x 160g can Princes Sandwich Tuna, drained
  • 3 tbsp Greek-style natural yogurt
  • 4 cheese slices
  • 8 cherry tomatoes, halved
  • Salad cress or grated carrot

How to make it

  1. Split the bread rolls in two, without cutting all the way through. Spread with butter and top with lettuce leaves.
  2. Mix the Princes Sandwich Tuna with the yogurt and share between the rolls.
  3. Cut each cheese slice in half with a zig-zag edge — just use a sharp knife or scissors to do this. Arrange in the rolls.
  4. Position the cherry tomatoes on the rolls to resemble ‘eyes’. We cut the tomatoes in half and stuck half a cocktail stick through them to secure them. You can top the rolls with salad cress or grated carrot to look like ‘hair’. Serve at once.

Finally, the last day of October…Happy Halloween!

October 31st – Happy Halloween!!

It’s Ella’s favourite holiday. She’s been looking forward to it since September started. She’s really happy that it’s finally the last day of October!
Her costume is all ready for going Trick or Treating with some friends later. She’s very excited.

Letter to the super wonderful husband

Dear Super Wonderful Husband,

I thought this was going to be really easy to write but I’ve been struggling to put into words what you actually mean to me.
You know you’re my rock. I can’t imagine living without you. We’ve been married nearly 12 years and I love you more now than I did when we said our vows.
Your unwavering support with my weight loss struggle keeps me fighting. Knowing you love me, no matter my size is one of the things I love the most because you make me feel totally secure in us and in myself.

You’ve helped me get my confidence back and I’m really happy with my life because of you. You’ve given me everything I’ve ever wanted; a family, a loving home and a loving husband. I’m often, out of the blue, hit with a feeling of being totally happy and content 🙂

I love going away, just the two of us and I can’t wait until we can go somewhere together again. I really enjoyed our week at Hay on Wye and look forward to finding another cosy cottage for us to get away.

Three confessions #Blogtober16

Three confessions

I’m struggling to think of three confessions if I’m honest! I’ve been putting this post off because I can’t think of anything. We’re off on holiday at the weekend and I want to get my posts scheduled so I have to tackle it today!

OK, confession number 1

I love pajama days. Most Sundays, if we don’t have anything planned, I’ll stay in my PJs all day and not feel at all guilty!

Confession number 2

I hide chocolate/other goodies from my kids. I always said I wouldn’t when I was younger but since I’ve grown up and seen how fast they can devour chocolate, I’ve changed my stance!

Confession number 3

I’m not a fan of school shows/plays/assemblies. When Aiden moved to secondary school I did a silent cheer because it meant no more school shows. He’s not into drama and performing so I could be certain I wouldn’t have to go and watch any and I didn’t. Kaycee is going to be a different matter. She’s already talking about signing up for the school show next year!

I couldn’t pick just one favourite Instagram photo from my account. I’ve got over 1200 photos on there and so many of them make my heart smile 🙂

I narrowed it down to just 3!

In third place, it’s Kaycee and Ella on Christmas Eve. They’ve got new PJs on and are showing a moment of peace on earth!

In second place, it’s Kaycee and Ella again but this time on Christmas Day. (Aiden isn’t on any of my photos on this post. He doesn’t like me to put photos of him on the blog anymore but I do love him being with us at Christmas)

In first place, I picked this photo of Ant looking at the books at the outdoor bookshop in Hay-On-Wye. We spent a wonderful week together, just the 2 of us. I can’t wait until we can go away on our own again 🙂

Place I would most like to visit #Blogtober16

Place I’d like to visit

I’ve mentioned before how one of my dreams is to take the girls Christmas shopping in New York. As well as New York, I’d also LOVE to visit a Christmas market in Europe. I don’t mind whether it’s in Germany, Switzerland, Sweden, Austria, France or anywhere else!

I love the idea of being wrapped up warm, wandering around the stalls with lights twinkling, food smells tantalising my nose and my husband by my side.

I know I’d spend too much and buy stuff we didn’t need but I know I’d have a wonderful time 🙂

#FrubesMoves Challenge – Get dancing!

Both girls love to dance. I think they’re inspired by shows such as The Next Step so when I heard of the #FrubesMoves Challenge, I knew they’d love to get dancing.

They also love Frubes and are always asking me to get them for the school packed lunches. I have to admit to loving them as well, especially banana flavour ones!
I’ve just realised that we didn’t enter our codes to win an island holiday. That’s what you get for letting the kids get to the yogurts first! They threw away the boxes before I had chance to go to the website 🙁

When we go to visit their Nanny, they put together dance shows for her. While we have a coffee and a natter, they go outside with a phone or a tablet, pick their music then work on their moves!
In the following video, Ella’s trying to incorporate her gymnastic moves with a dance 🙂

They love all kinds of dancing but I think Ella’s favourite is street dancing. I’d forgotten about this video. She’d been watching one of the dance programs and wanted me to film her doing her own dance. It’s from 2013 I think. She was 5 or 6.

The girls had planned to do a new routine for this blog post but we ran out of time. We’re currently in Mablethorpe on holiday and our internet connection isn’t good enough to upload videos!

What superpower would you like?

My first thought, when deciding what superpower I’d like was invisibility. I discounted it though because I might hear something I wasn’t meant to hear. I don’t want to hear things about me that wasn’t intended for for my ears. It would just upset me and what’s the point of that?

The power to heal sounds wonderful when you first think about it but it has its downsides as well. You’d have people wanting you to heal them every minute of the day and if you healed everyone, what would happen to the natural balance?

There are so many superpowers, more than I ever imagined but if I have to pick just one it would have to be the power to shapeshift so I can shift this extra weight and finally be thin!!

Checking tyres in autumn and winter

The weather has definitely decided it’s autumn now. For a while there it didn’t seem to have a clue what it was doing but now it’s cold. And rainy. And cold. Did I mention cold?
We’re going on holiday for half term to the Lincolnshire coast. Ant decided to check the car over before our trip because it’s been so wet and cold lately.
While he was checking tyres, lights etc he discovered a puncture in a back tyre. He has no idea how long it’s been there but he said it’s probably been there a while.

He had to change the wheel and now he has to get the puncture fixed.

It was a good job he checked before we set off and now we’re going to be checking other things before the winter sets in.

I’ve been checking on the AA website and the following is the advice they give to get your car ready for winter.

Winter safety advice

  • Antifreeze – check coolant level regularly and, if required, top-up with a mixture of the correct type of antifreeze. Your garage should check concentration to ensure adequate cold temperature protection.
  • Battery – the most common cause of winter breakdowns. A battery more than five years old may struggle in the cold – get it checked and replaced if necessary to avoid the inconvenience of an unplanned failure.
  • Fuel – keep at least a quarter of a tank in case of unexpected delay.
  • Lights – check and clean all lights regularly to make sure you can see and be seen clearly. Carry spare bulbs.
  • Car Tyres – should have at least 3mm of tread for winter motoring. Consider winter tyres for improved safety. Check pressures at least every fortnight.
  • Windscreen – reduce dazzle from the low sun by keeping the screen clean inside and out.  Now is a good time to renew worn wiper blades.
  • Screen wash – use a 50% mix of a good quality screen wash to reduce the chance of freezing in frosty weather.
  • Locks and door seals – stop doors freezing shut with a thin coat of polish or Vaseline on rubber door seals.  A squirt of water dispersant (WD-40) in locks will help stop them freezing.

I didn’t know the tip about using Vaseline or polish to stop doors freezing shut, that’s very useful to know 🙂

When it’s time to get your car checked over for the winter, and if you are in Dorset area, you can get tyres in Dorset from Point S local dealers.

Bacon and tomato palmiers #GBBOBloggers2016

Bacon and Tomato Palmiers

I’m currently in a caravan in Mablethorpe with a limited internet connection. This week I’m posting the pictures of the delicious bacon and tomato palmiers Ant made but I’m afraid I can’t find the recipe he used.
We need to find it because it was delicious and I want him to make them again! If he finds it, I’ll share the link 🙂

The bacon and tomato flavour was really nice and the pastry was lovely and crispy.

He made them on Friday and packed the leftovers on Saturday to bring with us to Mablethorpe. It was a good job he did. We had a little mix up with the caravan keys on Saturday. We had to wait a few hours for the owners to get in touch.
It came to lunchtime so we decided to sit in the car and eat the leftover palmiers and babka.

Ant made his own puff pastry but for the recipe below, I’ve used ready-made puff pastry.
