Slimming World All Day Breakfast Spaghetti

Spaghetti wouldn’t normally be my first choice for breakfast but when you’re fed-up of having the same thing every day, this makes a nice change.

All Day Breakfast Spaghetti

Serves 4
Syn free on extra easy

Ingredients:

500g Spaghetti
12 Bacon rashers with all the fat removed.
Bunch of spring onions
3 Tomatoes
4 Eggs
100g Fat-free natural yoghurt
Salt and pepper
2 Tsp dried Parsley
Fry light

Method:

  1. Cook spaghetti in a large pot of boiling water. Drain and set aside.
  2. Meanwhile, spray a large frying pan with fry light and fry the bacon and onions.
  3. Fry for 3-4 minutes then add the tomatoes.
  4. Fry for another 3 minutes.
  5. Crack the eggs into a bowl and whisk well. Stir in the fat-free natural yoghurt.
  6. Add the spaghetti to the bacon mixture and stir well. Take off the heat then stir in the egg and yoghurt mixture so it coats the spaghetti.
  7. Sprinkle with the parsley and if you like, add a tablespoon of grated parmesan for 1.5 syns
