Aloo Chat Slimming World Recipe

Aloo chat is a spiced potato and apple salad that’s perfect for packed lunches.

Aloo Chat

Ingredients

  • FOR THE CHAT MASALA
  • 1 tbsp freshly ground black pepper
  • 2 tbsp sea salt
  • 1 tbsp dry-roasted cumin seeds, roughly ground
  • 3 tsp amchoor (dried mango powder)
  • 1 tsp mild or medium coarse red chilli power

FOR THE ALOO

  • 1 red apple, cored and cut into small cubes
  • 3 potatoes, boiled and cut into small cubes
  • 1 small cucumber, cut into small cubes
  • Juice of 1 lemon
  • 4 tsp chat masala
  • A handful of freshly chopped coriander and mint leaves

Method

  1. Mix together all the ingredients for the chat masala and store in an airtight container until needed.
  2. For the aloo, place the apples, potatoes, cucumber and lemon juice in a mixing bowl and sprinkle over the chat masala. Toss to mix well and cover and chill in the fridge for 30 minutes to allow the flavours and the spices to develop.
  3. Just before serving, toss in the herbs and mix well. Serve immediately.
