Loaded Potato Skins – Slimming World Buffet

Welcome to day 12 of my 24 days of Slimming World Christmas Buffet Recipes. Today’s recipe is for Slimming World Loaded Potato Skins.

These are best served warm but you can make them in advance and just pop them in the oven to warm up before your guests arrive.
The only syns in these potatoes come from the cheese so they work out at 2 syns each.

Ingredients

  • 12 medium-sized potatoes
  • 1 300g pack bacon medallions, chopped into small pieces
  • 300g mushrooms, finely chopped
  • 4 spring onions, finely chopped
  • 240g mature cheddar cheese, grated

Method

  1. Pre-heat the oven to Gas 7
  2. Prick the potatoes and bake them for about 45 minutes. Check to see if they’re cooked. If not, cook for another 15 minutes and check again.
  3. While the potatoes are cooking, gently fry the bacon, mushrooms and onions until cooked.
  4. Allow the potatoes to cool then cut in half and scoop out the potato. take care not to break the skins.
  5. Mash the potato with the bacon mixture and half the cheese.
  6. Fill each potato with the potato and bacon mixture and sprinkle over the rest of the cheese.
  7. If you’re going to serve them straight away, bake in the oven for about 15 minutes otherwise, keep them in the fridge until needed and bake them in a preheated oven for about 20-25 minutes at gas 5
