Slimming World Welsh Onion Cake

Welsh onion cake

Serves 4

Ingredients:

  • 225g green cabbage, finely shredded
  • 500g onions, thinly sliced
  • 900g Maris Piper potatoes, thinly sliced
  • Salt and freshly ground black pepper
  • Low calorie cooking spray
  • 2 sprigs of rosemary

Method:

  1. Preheat your oven to 190°C/170°C Fan/Gas 5
  2. Blanch the shredded cabbage in boiling water for 5 minutes then drain well and set aside
  3. Spray a pan with low cal cooking spray and add the onions, a bit of salt and a sprig of rosemary
  4. Cover and cook over a low heat for 20 minutes, stirring often. Discard the rosemary and set aside
  5. Spray the potato slices with low cal cooking spray and season. Line the bottom of an oven proof frying pan with the potato slices, overlapping them, in a circle. Add the cabbage in a layer over the potatoes then layer the onions over the cabbage. Top with a final layer of potatoes.
  6. Place the pan on the hob over a medium heat for five minutes to colour the bottom then transfer to the oven and bake for 50 minutes or until the potatoes are cooked
  7. Remove from the oven and leave to stand for 10 minutes. Place a plate on top of the frying pan and turn out the onion cake. Remove the leaves from the rosemary sprig and garnish.

    Oh I love the look of this, yummy and great that it’s not too full of calories. Onion and potato are some of my favourite ingredients.

    I follow Slimming World too and so it’s nice to get ideas of different ways with potato other than jacket spuds!!
