Slimming World Slow Cooked Caribbean Pepper Pot Stew

Serves 4

Syn free on extra easy


400g stewing beef, all visible fat removed and cut into chunks
2 red peppers deseeded and cut into bite-sized pieces
2 small sweet potatoes, peeled and cut into bite-sized pieces
200g green beans, trimmed and halved
2 garlic cloves, finely chopped
2 tbsp jerk seasoning
1 tbsp red wine vinegar
1/4 tsp sweetener
400g tin chopped tomatoes
200ml beef stock
2 tbsp Worcestershire sauce
Salt and freshly ground black pepper



  1. Put all the ingredients in a slow cooker
  2. Stir well and cook on low for at least 8 hours
  3. Serve with rice
