Kaycee and Ella’s birthday cakes

The girls wanted to decorate their own cakes this year. They had a joint birthday BBQ yesterday for family and friends. Kaycee (9 yesterday) also had friends to sleepover the night before her birthday and Ella’s (7 on the 8th) having a sleepover on her birthday so we have to make another cake for when her friends come. She’s picked a One Direction cake 🙂

This is our entry to the Bakespiration challenge 🙂
 

Because Kaycee wanted a three-tiered cake we decided to make a Madeira cake. It has a denser texture than a normal Victoria sponge cake so works well when tiered.

Here’s the recipe we use:

FOR A 23cm (9in) SQUARE or 25.5cm (10in) ROUND TIN 

Makes: 28 slices

Baking time: 1hr 20-30min

Note:This cake can be made up to a week in advance or frozen for up to one month.

Ingredients

350g (12oz) each of softened unsalted butter and golden caster sugar
6 medium eggs
350g (12oz) sifted self-raising flour
175g (6oz) sifted plain flour

Method

  1. Cream the butter and sugar together until light and fluffy
  2. Add the eggs, one at a time, and mix in
  3. If the mixture looks as though it’s going to curdle, mix in 1tbsp flour
  4. Fold in the remaining flour
  5. Put into a floured/grease proof papered cake tin
  6. Bake at 170°C (150°C fan oven) mark 3

We bought ready made fondant from Tesco and some tubes of ready made icing to make life easier! The butterflies were from Ebay.

They really enjoyed decorating their own cakes and I see it becoming a regular thing!
